As a graduate Red Seal Chef from the Apprenticeship program I would honestly recommend you investigate this schooling. The quality of education is equitable and the costs are significantly lower. The draw back is the time factor but I believe its for the better.
i like to cook. a lot. but it is new. and i am a bit scared. a goofy person who is discovering her love of food and creating. eating is nice. an embarrassed vegetarian who sometimes dreams about bacon and beef jerky. come to my house for a meal.
